    2009
I've been with Paulaner for … years
    2006
Local characteristics or impressions of the country where I work
Fast, loud, different. That’s how to best describe it. But at the same time cool and fascinating - and every day something new and exciting.
    Bavarian beer culture is…
Beer garden with a beer and sunshine. Unfortunately, it happens too seldom in Shanghai.
    My best beer experience
To have made it to the top of a mountain after a mountain-biking tour with a cold beer welcoming me. The bottle slightly fogged up and some condensation drops still on the outside. I’ll never forget it…
The beer trend is developing towards…
Away from “cheap brands” - restaurant breweries and brewpubs are once again on the rise. Germans are ready again to pay a bit more for a good beer.
The following types of beer are available at the brewhouse where I brew beer
Lager, dark lager, Weißbier and 3-4 seasonal beers per year.
My favorite type of beer and a short reason why
Einbecker Brauherre, adelicious Pilsner with a nice bitterness. It’s more of a personal connection because I did my training at Einbecker Bräuhaus.
    My favorite type of hops
    no preference
If I were a type of beer, then I’d be a …? Why?
Weißbier. In general a bit heavier but just as refreshing.

    Bavarian beer culture is…
Bavarian beer! should be according to the Bavarian Purity Law, traditional, original, unadulterated, no experiments, not American style, in two words: old school
    My best beer experience
I’ve had a lot of adventures that involved some kind or another of beer, however not all of these are able to be put in print. But of course, as a brew master, I’m glad when my customers enjoy and appreciate the product.
The beer trend is developing towards…
Unfortunately, there are currently too many types of mixed beer drinks, that I don’t believe cater to actual beer clientele. A good example for the right direction are the Paulaner Bräuhaus restaurants, which are growing in great numbers - a beer concept combined with an atmosphere that goes wonderfully together.
The following types of beer are available at the brewhouse where I brew beer
Lager, Dark Lager, Weißbier and a variety of seasonal beers, like Salvator, Maibock, Oktoberfest beer and Christmas dark beer.
My favorite type of beer and a short reason why
Weißbier because it goes well with every taste and has a good, everyday drinkability.
    My favorite type of hops
    I haven’t.
If I were a type of beer, then I’d be a …? Why?
I haven't given this question much thought yet and I would leave it at that. I’m a brew master and believe that every type of beer offers something special.

    Bavarian beer culture is…
Bavarian beer culture is the best in the world!
    My best beer experience
In October 2012, to have had the opportunity to welcome former German Foreign Minister, Guido Westerwelle, to the Bräuhaus Shenyang and then have a very nice chat with him over a couple of beers.
The beer trend is developing towards…
The beer trend is evolving towards craft beer / microbreweries and alternative brewing methods, with new malt and hops varieties, and dry hopping, in order to obtain new flavors and aroma components to reach new consumers.
The following types of beer are available at the brewhouse where I brew beer
Year-round: lager and dark lager, seasonal specialties: Salvator, Maibock/Märzen, Weißbier, Oktoberfest beer, Winter-/Christmas-beer.
My favorite type of beer and a short reason why
My own self-brewed Weißbier because it’s always a pleasure to smell freshly-tapped beer and experience so many different kinds of aromas, like banana and orange, as well as other citrus notes combined with fresh yeast. These aromas are lost in the imported products, unfortunately.
    My favorite type of hops
Mandarina Bavaria - unfortunately I have’t yet been able to work with it, but I have already tried beer that could be brewed with it. I was excited at how this hops, on one hand mandarina / orange aromas and on the other hand, intense hops notes agreed with each other once in the beer. Also went well in wheat beer.
If I were a type of beer, then I’d be a …? Why?
Franconian Rauchbier (Smoked beer) - at first takes some getting used to, it’s not everyone’s taste, but after some time you learn to appreciate the quality. It’s rather popular with connoisseurs.

Local characteristics or impressions of the country where I work
"China: quality-oriented one shows off what one has, curious.
    Taiwan: polite, reserved, progressive."
    Bavarian beer culture is…
Getting together at your regular’s table in a rustic pub or restaurant with a fresh Weißbier and a hearty dish to go with it.
    My best beer experience
My first home-brewed beer and its production using spontaneous fermentation.
The beer trend is developing towards…
Individual beers, away from mass production - and industry beer. Manufacturing in close proximity to customers and according to their wishes. I believe that microbreweries and craft breweries have a big future.
The following types of beer are available at the brewhouse where I brew beer
Taiyuan: Lager and Dark lager and depending on the season also special brews.
Taipei: I’m brewing Lager and Dark lager all year round
My favorite type of beer and a short reason why
I don’t really have a favorite beer style, because each style has special properties for the appropriate occasion. If I had to choose… a nordic Pilsener because I prefer a pronounced hop aroma and a clear line in a beer.
    My favorite type of hops
This is hard to say because I haven't worked with all of the hop varieties yet, there are many I still would like to work with. Hallertauer Magnum is for certain a very good and distinctive hops in my opinion,
If I were a type of beer, then I’d be a …? Why?
Lager or an IPA - robustly brewed to survive a long journey.

Local characteristics or impressions of the country where I work
I am very impressed by the appreciation the Russians have towards us Germans. Also, their admiration of our discipline, consistency and order as well as the option we have to speak our minds freely, which is often portrayed so differently. But I also appreciate their values and customs very much. The Russian soul is indeed something special!
    Bavarian beer culture is…
No matter where in the world: a piece of home!
    My best beer experience
Every time I go out with my best friends! I don’t want to miss out on any of these!
The beer trend is developing towards…
Nothing has changed, because for me it’s all about quality and tradition. All this hype over new trends, I don’t pay it any attention because our current product range is more than enough and these trends are always short-lived. Waste of time and money!
The following types of beer are available at the brewhouse where I brew beer
Lager and wheat beer as the regulars and every month two specialty beers are switched out (always a lager and a dark lager, and naturally one that is appropriate for the season). Either Dark Lager, Pilsner, Helles, Bock, Superior, Märzen, Oktoberfest beer, Dunkles Weißbier, Helles Roggen, Dunkles Roggen, Weizenbock oder Mehrkornbier.
My favorite type of beer and a short reason why
I have no real favorite, because all of our beers have unique qualities that I value very much. There are four that I particularly like though:
    1. Pils, because I get excited about our possibilities to reach an optimal fermentation temperature.
    2. Weizenbock, because it’s so unbelievably aromatic.
    3. Superior, because it’s a challenge to create a nice shade of red, and
    4. Dunkle Roggen, because it is the most difficult beer to brew and has the slowest process.
    My favorite type of hops
    Hallertau Hersbrucker
If I were a type of beer, then I’d be a …? Why?
If I were a type of beer, I’d be one of my Bräuhaus-brewed beers, because all our beers are brewed strictly according to the Bavarian Purity Law and according to good ole’ tradition.

    My favorite type of hops
    Hallertauer tradition

The Chinese enjoy drinking German beer and food is very important to them, but also culture means a lot to them. We Germans enjoy a good reputation, but we still have to be very diplomatic with the locals. One negative aspect here, unfortunately, is the huge environmental problems and that the pedestrian crosswalks are ignored.
    Bavarian beer culture is…
    Living Traditions
    My best beer experience
It was the technical expo at Brauerei Stiegl in Austria. Cool atmosphere, beautiful brewery and Stiegl’s brewing world - a pleasure to see.
The beer trend is developing towards…
Once again a return to full-bodied beers with their own character; away from mainstream and back to local!
The following types of beer are available at the brewhouse where I brew beer
Lager, Dark lager, Weißbier and seasonal Festbier, Märzen and Salvator.
My favorite type of beer and a short reason why
Weißbier - an enjoyable beer in summer with its fruity notes and effervescence at just the right temperature on the palate “Simply beautiful!“
    My favorite type of hops
    Spalter aroma hops
If I were a type of beer, then I’d be a …? Why?
A Pils with beautiful, well-rounded notes of hops and appropriate wort.

The beer trend is developing towards…
Unfortunately, it should always be exotic.
The following types of beer are available at the brewhouse where I brew beer
Lager, Dark lager, Weißbier and seasonal varieties like Salvator, Maibier, Oktoberfest beer und Christmas beer.
My favorite type of beer and a short reason why
Dark lager, because it’s somewhat stronger in taste.
    My favorite type of hops
It depends on the beer, but always, an aromatic hops.
If I were a type of beer, then I’d be a …? Why?

The Chinese Wall is pretty and all, as is is the Forbidden City and also the Xi'an City Wall… but a piece of wall is a piece of the wall. One doesn’t need to take a day trip there because such a wall or building will still look the same as it did 2,000 years ago! Even the Terrakotta Army that hasn’t moved in 2,000 years, still won’t move if you watch them for 3 days. However, what really impresses me about Chinese history is that at the time when all this was built, people back at home in Germany were dressed in patches of leather and armed with a wooden bat chasing deer and boar around.
    Bavarian beer culture is…
After my wife and my family, everything.
    My best beer experience
    Had hundreds and very nice!
The beer trend is developing towards…
Lighter or alcohol-free beer, or rather, mixed beer drinks. But with certainty not in China and not for me!
The following types of beer are available at the brewhouse where I brew beer
Lager and Dark lager are available throughout the year. I offer Salvator in March, Maibock naturally in May, summer- und Weißbier in summer, and then Oktoberfest beer and for winter, Weihnactsbier (Christmas beer).
My favorite type of beer and a short reason why
Lager for the bitterness. Since I am Bavarian, it’s unnatural to be a Pils drinker but I still am.
    My favorite type of hops
There isn’t one - ask a master baker about his favorite flour! Brewing or baking, both require a variety of raw materials, so there is no favorite!
If I were a type of beer, then I’d be a …? Why?
A Pils. Because it’s bitter, tart and dry - like me most of the time.

Jakarta is a typical southeast Asian big city. Here in the city there are many traffic jams since so many people come in every day from smaller towns. The difference between the poor and the rich is clearly seen. But all the people are very friendly, especially to foreigners.
    Bavarian beer culture is…
Bavarian beer culture is very interesting particularly for me as an Indonesian because we don’t have a real beer culture there. In Germany I’ve learned that beer is viewed as a ‘holy water,’ in how it is brewed and drank. I learned all of this while I was studying at Munich’s Technical University in Weihenstephan.
    My best beer experience
It was the Free beer festival in Weihenstephan, when Germany won against Argentina in the 2006 World Cup. That was when I first came to Germany.
The beer trend is developing towards…
Pils will always remain a favorite, but in the future maybe something lighter and a little less bitter.
The following types of beer are available at the brewhouse where I brew beer
Lager and Dark lager are brewed the whole year. There are seasonal beers too.
My favorite type of beer and a short reason why
I prefer to drink Lager because it’s very light. But also Weißbier is one of my favorites because it has a unique aroma.
    My favorite type of hops
I love aroma hops, like Perle, Hallertauer Tradition or Hallertauer Mittelfrüher hops.
If I were a type of beer, then I’d be a …? Why?
Then I'd be a dark Weißbier. Not many people like to drink this beer, but once you’ve tried it two or three times, then it’s fantastic.
